Ingredients

  • 2 large eggplants
  • 1/4 cup olive oil
  • Juice of 1 lemon
  • 2 cloves of garlic, minced
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • Fresh parsley, for garnish

Instructions

  1. Preheat the oven to 400°F (200°C).

  2. Slice the eggplants into 1/2 inch thick rounds.

  3. In a small bowl, whisk together the olive oil, lemon juice, minced garlic, salt, and black pepper.

  4. Place the eggplant slices on a baking sheet and brush both sides generously with the olive oil mixture.

  5. Roast the eggplant in the preheated oven for about 25-30 minutes, or until they are golden brown and tender.

  6. Remove the eggplant from the oven and let it cool slightly.

  7. Garnish with fresh parsley and serve warm.
