Ingredients
- 1 cup split peas, rinsed
- 1 onion, chopped
- 2 cloves of garlic, minced
- 1 tsp ginger, grated
- 1 tsp cumin powder
- 1 tsp turmeric powder
- 1 tsp coriander powder
- 1 cup baby spinach, chopped
- 2 cups vegetable broth
- 1 tbsp olive oil
- Salt to taste
Instructions

In a large pot, heat the olive oil and sauté the onions, garlic, and ginger until fragrant.

Add the cumin, turmeric, and coriander powder and cook for another minute.

Add the split peas and vegetable broth, bring to a boil, then reduce heat and simmer for 20 minutes or until the split peas are tender.

Add the chopped spinach and cook for another 5 minutes.

Remove from heat and let cool slightly.

Use an immersion blender or a food processor to blend the dhal until smooth.

Season with salt to taste.

Serve warm with rice or naan bread.
