Ingredients

  • 4 medium potatoes, peeled and diced
  • 1 onion, finely chopped
  • 2 cloves of garlic, minced
  • 1 jalapeno pepper, seeded and diced
  • 1 tbsp vegetable oil
  • 1 tsp chili powder
  • 1/2 tsp cumin
  • 1/2 tsp paprika
  • Salt, to taste
  • Fresh cilantro, for garnish

Instructions

  1. In a large skillet, heat the vegetable oil over medium heat. Add the onions, garlic, and jalapeno pepper and sauté until the onions are translucent.

  2. Add the diced potatoes to the skillet and cook until they are golden brown and crispy, stirring occasionally.

  3. Sprinkle the chili powder, cumin, paprika, and salt over the potatoes. Stir well to coat.

  4. Reduce the heat to low and cover the skillet. Allow the potatoes to cook for an additional 10-15 minutes, or until they are tender.

  5. Remove from heat and garnish with fresh cilantro before serving.
