Ingredients

  • 1 lb snow peas, trimmed
  • 2 tbsp extra virgin olive oil
  • 2 tbsp lemon juice
  • 1 clove garlic, minced
  • 1/2 tsp dried oregano
  • 1/4 tsp salt
  • 1/4 tsp black pepper
  • 1/4 cup crumbled feta cheese
  • 1/4 cup chopped fresh mint

Instructions

  1. Bring a pot of salted water to a boil. Add the snow peas and cook for 2 minutes, then transfer to a bowl of ice water to stop the cooking process. Drain and pat dry.

  2. In a small bowl, whisk together the olive oil, lemon juice, garlic, oregano, salt, and black pepper.

  3. Place the snow peas in a serving dish and drizzle the dressing over them. Toss to coat.

  4. Sprinkle the feta cheese and fresh mint over the snow peas.

  5. Serve immediately and enjoy!
