Ingredients
- 1.5 kg potatoes, peeled and cut into chunks
- 2 lemons, zested and juiced
- 4 sprigs of fresh sage, leaves picked and chopped
- 2 tbsp olive oil
- Salt and pepper, to taste
Instructions

Preheat the oven to 200°C (400°F).

Place the potato chunks in a large pot of salted water and bring to a boil. Cook for 5 minutes, then drain.

In a large roasting tray, mix together the lemon zest, lemon juice, chopped sage, olive oil, salt, and pepper.

Add the parboiled potatoes to the roasting tray and toss them in the lemon-sage mixture until they are well coated.

Roast in the preheated oven for 40-45 minutes, or until the potatoes are golden and crispy, turning them occasionally for even cooking.

Serve the roasties hot, garnished with extra chopped sage if desired.
