Ingredients
- 4 kohlrabi bulbs
- 8 slices of bacon, sliced into small pieces
- 1/2 cup grated Parmesan cheese
- 2 tablespoons olive oil
- 1 teaspoon garlic powder
- Salt and pepper to taste
- Fresh parsley, chopped (for garnish)
Instructions

Peel the kohlrabi bulbs and cut them into thin, noodle-like strips using a spiralizer or a julienne peeler.

In a large pan, cook the bacon over medium heat until crispy. Remove the bacon from the pan and set aside, leaving the bacon grease in the pan.

Add the olive oil to the bacon grease and heat over medium-high heat. Add the kohlrabi noodles, garlic powder, salt, and pepper. Sauté for about 5-7 minutes until the kohlrabi softens slightly.

Return the cooked bacon to the pan and toss everything together for another minute.

Remove from heat and sprinkle with grated Parmesan cheese. Garnish with fresh parsley.
