Ingredients

  • 2 pounds potatoes, peeled and cubed
  • 1 cup buttermilk
  • 2 tablespoons unsalted butter
  • 2 tablespoons chopped fresh herbs (such as parsley, chives, or thyme)
  • Salt and pepper to taste

Instructions

  1. In a large pot, add the potatoes and enough water to cover them. Bring to a boil and cook until the potatoes are fork-tender, about 15-20 minutes.

  2. Drain the potatoes and return them to the pot. Add the buttermilk, butter, and chopped herbs.

  3. Mash the potatoes until creamy and smooth. Season with salt and pepper to taste.

  4. Transfer the mashed potatoes to a serving dish and garnish with additional herbs, if desired. Serve hot.
