- 1.5 pounds new potatoes, halved or quartered
- 2 tablespoons olive oil
- 2 cloves garlic, minced
- 1 tablespoon chopped fresh rosemary
- 1 tablespoon chopped fresh thyme
- 1 teaspoon salt
- 1/2 teaspoon black pepper
Instructions

Preheat the oven to 425°F (220°C).

In a large bowl, combine the potatoes, olive oil, garlic, rosemary, thyme, salt, and black pepper. Toss until the potatoes are well coated.
