Ingredients
- 4 medium leeks, trimmed and halved lengthwise
- 2 tbsp olive oil
- Salt and pepper to taste
- 4 oz goat’s cheese, crumbled
- Fresh thyme leaves, for garnish
Instructions

Preheat a griddle pan over medium heat.

Brush the leeks with olive oil and season with salt and pepper.

Place the leeks on the griddle pan and cook for 10-12 minutes, turning occasionally, until tender and lightly charred.

Remove the leeks from the griddle pan and arrange on a serving plate.
