Ingredients
- 500g green beans, trimmed
- 2 tbsp olive oil
- 1 onion, finely chopped
- 2 garlic cloves, minced
- 1 can (400g) chopped tomatoes
- 1 tsp dried oregano
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1/4 cup chopped fresh parsley
- 1 lemon, cut into wedges (for serving)
Instructions

Boil a pot of salted water and blanch the green beans for 5 minutes. Drain and set aside.

Heat the olive oil in a large skillet over medium heat. Add the onion and garlic and sauté until softened.

Add the chopped tomatoes, dried oregano, salt, and pepper to the skillet. Cook for 10 minutes, stirring occasionally.

Add the blanched green beans to the skillet and mix well with the tomato sauce. Cover and simmer for 15 minutes, until the beans are tender.

Stir in the fresh parsley and cook for an additional 2 minutes.

Serve the Greek green beans hot, with lemon wedges on the side.
