Ingredients

  • 2 large fennel bulbs, sliced
  • 2 cups heavy cream
  • 2 cloves garlic, minced
  • 1 cup grated Gruyere cheese
  • Salt and pepper, to taste
  • Fresh thyme leaves, for garnish

Instructions

  1. Preheat the oven to 375°F (190°C). Grease a baking dish.

  2. In a medium saucepan, bring the heavy cream to a simmer. Add the minced garlic and simmer for 5 minutes.

  3. Layer half of the sliced fennel in the prepared baking dish. Pour half of the cream mixture over the fennel and sprinkle with salt, pepper, and half of the grated Gruyere cheese. Repeat the layers with the remaining fennel, cream mixture, and cheese.

  4. Cover the baking dish with aluminum foil and bake for 1 hour. Remove the foil and bake for an additional 30 minutes or until the top is golden and the fennel is tender.

  5. Garnish with fresh thyme leaves before serving.
