Ingredients
- 500g green beans (trimmed and halved)
- 2 tablespoons olive oil
- 1 onion (chopped)
- 2 cloves of garlic (minced)
- 2 tomatoes (diced)
- 1 teaspoon dried oregano
- 1 teaspoon dried thyme
- Salt and pepper to taste
- Fresh parsley for garnish
Instructions

Heat the olive oil in a large pan over medium heat. Add the onion and garlic and sauté until translucent.

Add the green beans to the pan and cook for 5 minutes, stirring occasionally.

Stir in the tomatoes, oregano, thyme, salt, and pepper. Reduce the heat to low, cover the pan, and simmer for 35-40 minutes until the beans are tender.

Once cooked, remove from heat and garnish with fresh parsley.

Serve hot as a main dish or as a side with crusty bread.
