Ingredients
- 1 head of escarole, washed and chopped
- 2 cloves of garlic, minced
- 2 tablespoons of olive oil
- 1 can (15 oz) of cannellini beans, drained and rinsed
- 1 cup of vegetable broth
- Salt and pepper to taste
Instructions

In a large skillet, heat olive oil over medium heat. Add minced garlic and cook until fragrant, about 1 minute.

Add the chopped escarole to the skillet and sauté until wilted, about 5 minutes.

Add the cannellini beans and vegetable broth to the skillet. Season with salt and pepper to taste.

Cover the skillet and let the mixture simmer for about 10 minutes, until the flavors are well blended.
