- 4 medium zucchinis
- 1 cup cooked quinoa
- 1/2 cup diced bell peppers
- 1/2 cup diced tomatoes
- 1/4 cup diced red onions
- 1/4 cup grated Parmesan cheese
- 2 cloves garlic, minced
- 1 tsp dried basil
- 1 tsp dried oregano
- Salt and pepper to taste
Instructions

Preheat the oven to 375°F (190°C).

Slice each zucchini in half lengthwise and scoop out the center to create a hollow cavity. Place the hollowed zucchini halves on a baking sheet.

In a mixing bowl, combine the cooked quinoa, diced bell peppers, diced tomatoes, diced red onions, grated Parmesan cheese, minced garlic, dried basil, dried oregano, salt, and pepper. Mix well to combine.

Spoon the quinoa mixture into the hollowed zucchini halves, making sure to press it down firmly.

Bake in the preheated oven for 30-35 minutes, or until the zucchini is tender and the filling is golden brown.
