Ingredients
- 2 cups pumpkin, peeled and diced
- 1 onion, finely chopped
- 2 tomatoes, diced
- 2 cloves of garlic, minced
- 1-inch piece of ginger, grated
- 1 green chili, slit
- 1 tsp cumin seeds
- 1 tsp turmeric powder
- 1 tsp red chili powder
- 1 tsp coriander powder
- 1 tsp garam masala
- Salt to taste
- 2 tbsp oil
- Fresh cilantro, for garnish
Instructions

Heat oil in a pan and add cumin seeds. Let them splutter.

Add chopped onions, minced garlic, grated ginger, and slit green chili. Saute until onions turn golden brown.

Add diced tomatoes and cook until they become mushy.

Add turmeric powder, red chili powder, coriander powder, garam masala, and salt. Mix well.

Add diced pumpkin and mix until it is well coated with the spices.

Cook on medium heat until the pumpkin is tender, stirring occasionally. If needed, add some water to prevent sticking.

Once the pumpkin is cooked, garnish with fresh cilantro and serve hot with rice or roti.
