Ingredients

  • 1 tbsp olive oil
  • 1 small onion, diced
  • 2 cloves of garlic, minced
  • 1 red bell pepper, sliced
  • 1 yellow bell pepper, sliced
  • 1 zucchini, sliced
  • 1 cup broccoli florets
  • 1 cup sliced mushrooms
  • 1 cup fresh or frozen corn kernels
  • 1 cup heavy cream
  • 1/2 cup grated Parmesan cheese
  • Salt and pepper to taste

Instructions

  1. In a large skillet, heat the olive oil over medium heat.

  2. Add the diced onion and minced garlic. Sauté until the onion is translucent.

  3. Add the sliced bell peppers, zucchini, broccoli, mushrooms, and corn kernels. Cook for about 5 minutes until the vegetables are slightly tender.

  4. Stir in the heavy cream and Parmesan cheese. Season with salt and pepper to taste.

  5. Cook for another 5 minutes until the cream is heated through and the cheese is melted.

  6. Serve hot as a side dish.
