Ingredients
- 2 large courgettes, spiralized
- 1 onion, finely chopped
- 2 cloves of garlic, minced
- 1 tsp of ground cumin
- 1 tsp of paprika
- 1/2 tsp of salt
- 1/4 tsp of black pepper
- 2 eggs
- 4 tbsp of flour
- 4 tbsp of olive oil
- For the tomato salsa:
- 4 ripe tomatoes, diced
- 1/2 red onion, finely chopped
- 1/2 cup of fresh cilantro, chopped
- 1/2 lime, juiced
- Salt and pepper to taste
Instructions

In a large bowl, combine the courgette, onion, garlic, cumin, paprika, salt, and black pepper.

Stir in the eggs and flour until well combined.

Heat 2 tablespoons of olive oil in a large non-stick frying pan over medium heat.

Scoop spoonfuls of the courgette mixture onto the pan, pressing them down to form fritters. Cook for 3-4 minutes on each side until golden brown.

Remove the fritters from the pan and set aside on a plate lined with kitchen paper.

In a small bowl, combine the diced tomatoes, red onion, cilantro, lime juice, salt, and pepper to make the tomato salsa.

Serve the courgetti fritters with a dollop of tomato salsa on top.
