Ingredients

  • 2 large courgettes, spiralized
  • 1 onion, finely chopped
  • 2 cloves of garlic, minced
  • 1 tsp of ground cumin
  • 1 tsp of paprika
  • 1/2 tsp of salt
  • 1/4 tsp of black pepper
  • 2 eggs
  • 4 tbsp of flour
  • 4 tbsp of olive oil
  • For the tomato salsa:
  • 4 ripe tomatoes, diced
  • 1/2 red onion, finely chopped
  • 1/2 cup of fresh cilantro, chopped
  • 1/2 lime, juiced
  • Salt and pepper to taste

Instructions

  1. In a large bowl, combine the courgette, onion, garlic, cumin, paprika, salt, and black pepper.

  2. Stir in the eggs and flour until well combined.

  3. Heat 2 tablespoons of olive oil in a large non-stick frying pan over medium heat.

  4. Scoop spoonfuls of the courgette mixture onto the pan, pressing them down to form fritters. Cook for 3-4 minutes on each side until golden brown.

  5. Remove the fritters from the pan and set aside on a plate lined with kitchen paper.

  6. In a small bowl, combine the diced tomatoes, red onion, cilantro, lime juice, salt, and pepper to make the tomato salsa.

  7. Serve the courgetti fritters with a dollop of tomato salsa on top.
