Ingredients
- 4 medium sweet potatoes
- 1 red chili, finely chopped
- 1 avocado, diced
- 1 tomato, diced
- 1/4 red onion, finely chopped
- Juice of 1 lime
- 2 tablespoons chopped cilantro
- Salt and pepper to taste
- 2 tablespoons olive oil
Instructions

Preheat the oven to 400°F (200°C).

Pierce each sweet potato several times with a fork and place on a baking sheet. Bake for 45 minutes or until tender.

In a bowl, combine the red chili, avocado, tomato, red onion, lime juice, cilantro, salt, and pepper. Mix well.

Once the sweet potatoes are cooked, remove them from the oven and let cool for a few minutes.

Cut a slit lengthwise in each sweet potato and gently push the ends together to create an opening.

Spoon the chili and avocado salsa mixture into the opening of each sweet potato.

Drizzle each sweet potato with olive oil and sprinkle with a pinch of salt and pepper.
