Ingredients
- 4 large carrots, peeled and sliced into thin strips
- 1/4 cup pine nuts
- 1/4 cup raisins
- 2 tablespoons chopped parsley
- 2 tablespoons olive oil
- 1 tablespoon honey
- Juice of 1 lemon
- Salt and pepper to taste
Instructions

In a large skillet, heat the olive oil over medium heat.

Add the carrot strips and cook for 5-7 minutes, stirring occasionally, until they start to soften.

Add the pine nuts and cook for another 2 minutes, until they are lightly toasted.

Stir in the raisins, chopped parsley, honey, lemon juice, salt, and pepper. Cook for an additional 3-4 minutes, until everything is well combined and heated through.
