Ingredients
- 1 cup bulgur wheat
- 2 cups vegetable broth
- 2 tablespoons olive oil
- 1 onion, chopped
- 2 carrots, grated
- 1/2 cup hazelnuts, chopped
- 1/4 cup fresh parsley, chopped
- Salt and pepper to taste
Instructions

In a saucepan, bring the vegetable broth to a boil. Add the bulgur wheat, reduce heat to low, cover, and simmer for 15 minutes or until all the liquid is absorbed.

Meanwhile, heat the olive oil in a skillet over medium heat. Add the chopped onion and cook until softened, about 5 minutes.

Stir in the grated carrots and cook for another 5 minutes, until the carrots are tender.

Add the cooked bulgur wheat to the skillet and mix well.

Stir in the chopped hazelnuts and fresh parsley. Season with salt and pepper to taste.

Cook for an additional 2-3 minutes, until all the flavors are well combined.
