- 2 large zucchini
- 1 cup breadcrumbs
- 1/2 cup grated Parmesan cheese
- 1/2 teaspoon garlic powder
- 1/2 teaspoon paprika
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 2 eggs, beaten

Preheat the oven to 425°F (220°C). Line a baking sheet with parchment paper.

Cut the zucchini into fry-like shapes, about 1/2 inch thick and 3-4 inches long.

In a shallow dish, mix together the breadcrumbs, Parmesan cheese, garlic powder, paprika, salt, and black pepper.

Dip each zucchini fry into the beaten eggs, then coat it with the breadcrumb mixture, pressing it firmly to adhere.
