  • 2 cups of mixed vegetables (such as carrots, broccoli, bell peppers, and zucchini), chopped

  • 1 tsp garlic powder
  • 1 tsp dried oregano
  • 1/2 tsp salt
  • 1/4 tsp black pepper

Instructions

  1. Preheat the oven to 400°F (200°C).

  2. In a large bowl, toss the chopped vegetables with olive oil, garlic powder, dried oregano, salt, and black pepper.

  3. Spread the vegetables evenly on a baking sheet.

  4. Bake in the preheated oven for 25-30 minutes, or until the vegetables are tender and slightly browned.

  5. Remove from the oven and serve hot as a delicious side dish.
