Ingredients
- 4 large carrots, peeled and diced
- 2 large sweet potatoes, peeled and diced
- 2 tablespoons olive oil
- Salt and pepper, to taste
- 2 cloves garlic, minced
- 1/4 cup grated Parmesan cheese
- 1/4 cup chopped fresh parsley
Instructions

Preheat the oven to 400°F (200°C).

Place the diced carrots and sweet potatoes on a baking sheet.

Drizzle with olive oil and season with salt, pepper, and minced garlic. Toss to coat evenly.

Bake in the preheated oven for 30-35 minutes, or until the vegetables are tender.

Remove from the oven and transfer the baked carrots and sweet potatoes to a mixing bowl.

Mash the vegetables using a potato masher until smooth and creamy.
