Ingredients

  • 4 large carrots, peeled and diced
  • 2 large sweet potatoes, peeled and diced
  • 2 tablespoons olive oil
  • Salt and pepper, to taste
  • 2 cloves garlic, minced
  • 1/4 cup grated Parmesan cheese
  • 1/4 cup chopped fresh parsley

Instructions

  1. Preheat the oven to 400°F (200°C).

  2. Place the diced carrots and sweet potatoes on a baking sheet.

  3. Drizzle with olive oil and season with salt, pepper, and minced garlic. Toss to coat evenly.

  4. Bake in the preheated oven for 30-35 minutes, or until the vegetables are tender.

  5. Remove from the oven and transfer the baked carrots and sweet potatoes to a mixing bowl.

  6. Mash the vegetables using a potato masher until smooth and creamy.

  7. Stir in the grated Parmesan cheese and chopped parsley.

  8. Adjust the seasoning if needed.

  9. Transfer the mashed mixture back to the baking sheet and bake for an additional 10 minutes, or until golden and crispy on top.

  10. Serve the baked carrot & sweet potato mash as a delicious and healthy side dish.
