A hearty and comforting dish made with leftover turkey and vegetables, baked in a savory pie crust.

Ingredients
- 1 pie crust
- 2 cups of cooked leftover turkey
- 1 cup of frozen mixed vegetables
- 1/2 cup of diced onion
- 1/2 cup of diced celery
- 1/2 cup of diced carrots
- 3 tbsp of butter
- 3 tbsp of flour
- 2 cups of chicken stock
- 1 tsp of dried thyme
- 1 tsp of salt
- 1/4 tsp of black pepper
Instructions

Preheat oven to 400°F.

In a pot, melt butter over medium heat. Add onions, celery, and carrots; cook until tender.

Stir in flour and cook for 1-2 minutes. Slowly add chicken stock, stirring constantly to prevent lumps.

Add in thyme, salt, black pepper, turkey, and mixed vegetables; mix well.
