Ingredients
- 1 tbsp oil
- 1 onion, diced
- 1 red bell pepper, diced
- 2 garlic cloves, minced
- 1 tsp cumin
- 1 tsp chili powder
- 1/2 tsp smoked paprika
- 1/4 tsp salt
- 1 can diced tomatoes
- 1 can kidney beans, drained and rinsed
- 2 cups leftover turkey, shredded
- 1 cup chicken broth
- Optional toppings: shredded cheese, sour cream, cilantro
Instructions

Heat oil in a large pot over medium heat. Add onion and red pepper and sauté until softened, about 5 minutes.

Add garlic and spices and cook for 1 minute.

Add tomatoes, beans, turkey, and broth. Bring to a boil, then reduce heat and simmer for 30-40 minutes.

Serve chili hot with desired toppings.
