Ingredients
- 2 boneless, skinless chicken breasts, cut into strips
- 1 red bell pepper, sliced
- 1 green bell pepper, sliced
- 1 yellow bell pepper, sliced
- 1 onion, sliced
- 2 cloves garlic, minced
- 2 tablespoons olive oil
- 1 tablespoon chili powder
- 1 teaspoon cumin
- 1 teaspoon paprika
- 1/2 teaspoon salt
- 1/2 teaspoon black pepper
- 8 mini flour tortillas
- Optional toppings: shredded cheese, salsa, sour cream, guacamole
Instructions

In a large skillet, heat olive oil over medium heat. Add garlic and cook for 1 minute until fragrant.

Season the chicken strips with chili powder, cumin, paprika, salt, and black pepper. Add chicken to the skillet and cook until browned and cooked through, about 5-7 minutes. Remove from skillet and set aside.

In the same skillet, add sliced bell peppers and onion. Cook for 5 minutes until vegetables are tender-crisp.

Return the chicken to the skillet with the vegetables and stir to combine. Cook for an additional 2 minutes to heat through.

Warm the mini flour tortillas according to package instructions.

Serve the chicken fajita mixture on the warm tortillas. Top with shredded cheese, salsa, sour cream, guacamole, or any other desired toppings.
