How To Make Thai Satay Stir-Fry

Ingredients
- 1 lb chicken breast, thinly sliced
- 2 tbsp vegetable oil
- 2 cloves garlic, minced
- 1 inch ginger, grated
- 1 red bell pepper, thinly sliced
- 1 yellow bell pepper, thinly sliced
- 1 medium onion, thinly sliced
- 1 cup snap peas
- 1/2 cup peanut butter
- 3 tbsp soy sauce
- 2 tbsp lime juice
- 2 tbsp honey
- 1/4 cup water
- 1/4 cup chopped peanuts (optional)
- Fresh cilantro, for garnish
Instructions

In a large skillet or wok, heat the vegetable oil over medium-high heat. Add the garlic and ginger and sauté for 1 minute until fragrant.

Add the chicken slices to the skillet and cook until browned and cooked through, about 5-7 minutes.

Push the chicken to one side of the skillet and add the bell peppers, onion, and snap peas. Stir-fry for 3-4 minutes until the vegetables are crisp-tender.

In a small bowl, whisk together the peanut butter, soy sauce, lime juice, honey, and water to make the satay sauce.

Pour the sauce into the skillet with the chicken and vegetables. Stir to coat everything evenly and cook for an additional 2-3 minutes until the sauce is heated through.

Serve the Thai satay stir-fry over steamed rice, garnished with chopped peanuts and fresh cilantro.
