Ingredients
- 1 pound of pork tenderloin, thinly sliced
- 1/4 cup of cornstarch
- 1/4 cup of soy sauce
- 3 tablespoons of rice vinegar
- 2 tablespoons of ketchup
- 2 tablespoons of brown sugar
- 1 tablespoon of vegetable oil
- 1 bell pepper, sliced
- 1 onion, sliced
- 1 cup of pineapple chunks
- 1/4 cup of water
Instructions

In a large bowl, toss the pork slices with cornstarch until coated evenly.

In a separate bowl, mix soy sauce, rice vinegar, ketchup, and brown sugar to make the sauce.

Heat oil in a wok or large skillet over medium-high heat.

Add the pork and cook until browned.

Remove the pork from the skillet and set aside.

In the same skillet, add bell pepper and onion and cook until softened.

Add the pineapple chunks and cook for another minute.

Pour the sauce over the vegetables and stir to combine.

Return the pork to the skillet and mix well.

Add water to thin out the sauce if needed.

Cook for a few minutes until the sauce thickens and coats the pork and vegetables.

Serve the sweet and sour pork stir-fry over steamed rice.
