Ingredients
- 1 lb chicken breast, thinly sliced
- 2 tbsp soy sauce
- 1 tbsp honey
- 1 tbsp sesame oil
- 2 cloves garlic, minced
- 1 inch ginger, grated
- 1 bell pepper, thinly sliced
- 1 cup snap peas
- 1 cup corn kernels
- 1 cup cherry tomatoes, halved
- 2 green onions, sliced
- 1/4 cup fresh cilantro, chopped
- Salt and pepper to taste
Instructions

In a small bowl, mix together soy sauce, honey, and sesame oil. Set aside.

Heat a large skillet or wok over medium-high heat. Add chicken and cook until browned and cooked through, about 5-7 minutes. Remove from skillet and set aside.

In the same skillet, add garlic and ginger. Cook for 1-2 minutes until fragrant.

Add bell pepper, snap peas, and corn. Cook for 3-4 minutes until vegetables are tender-crisp.

Return chicken to the skillet and pour the soy sauce mixture over the chicken and vegetables. Stir-fry for another 2-3 minutes until everything is well coated and heated through.

Remove from heat and stir in cherry tomatoes, green onions, and cilantro. Season with salt and pepper to taste.
