Ingredients
- 1 lb beef sirloin, thinly sliced
- 1 bunch asparagus, trimmed and cut into bite-sized pieces
- 1 cup sugar snap peas
- 2 tbsp green curry paste
- 1 tbsp vegetable oil
- 1 cup coconut milk
- 2 tbsp fish sauce
- 1 tbsp soy sauce
- 1 tbsp brown sugar
- 1 lime, juiced
- Fresh cilantro, for garnish
Instructions

In a large skillet or wok, heat the vegetable oil over high heat.

Add the beef slices and stir-fry for 2-3 minutes, until browned. Remove from the skillet and set aside.

In the same skillet, add the green curry paste and cook for 1 minute, stirring constantly.

Add the asparagus and sugar snap peas to the skillet and stir-fry for 2-3 minutes, until crisp-tender.

Return the beef to the skillet and add the coconut milk, fish sauce, soy sauce, brown sugar, and lime juice. Stir well to combine.

Cook for an additional 2-3 minutes, until the sauce has thickened slightly and the beef is cooked to your liking.

Serve the stir-fry green curry beef with asparagus and sugar snaps over steamed rice or noodles.
