How To Make Noodle Stir-Fry with Crunchy Peanuts

Ingredients
- 8 oz (225g) noodles (such as spaghetti or udon)
- 2 tbsp vegetable oil
- 1 onion, sliced
- 2 cloves of garlic, minced
- 1 bell pepper, sliced
- 1 carrot, julienned
- 1 cup snow peas
- 1/2 cup crunchy peanuts
- 3 tbsp soy sauce
- 2 tbsp oyster sauce
- 1 tbsp sesame oil
- 1 tsp sugar
- 1/2 tsp red pepper flakes (optional)
- Salt and pepper, to taste
- Fresh cilantro, for garnish
Instructions

Cook the noodles according to package instructions. Drain and set aside.

In a large skillet or wok, heat the vegetable oil over medium-high heat.

Add the onion and garlic to the skillet and stir-fry for 2 minutes, until fragrant.

Add the bell pepper, carrot, and snow peas to the skillet and continue to stir-fry for another 3-4 minutes, until the vegetables are crisp-tender.

In a small bowl, whisk together the soy sauce, oyster sauce, sesame oil, sugar, red pepper flakes (if using), salt, and pepper.

Push the vegetables to one side of the skillet and add the cooked noodles to the other side.

Pour the sauce over the noodles and vegetables, and gently toss everything together until well-coated.

Stir in the crunchy peanuts and cook for another 1-2 minutes, until heated through.

Remove from heat and garnish with fresh cilantro.
