Ingredients
- 4 boneless, skinless chicken breasts
- 2 tablespoons olive oil
- 1 onion, diced
- 3 cloves garlic, minced
- 1 red bell pepper, sliced
- 1 yellow bell pepper, sliced
- 2 zucchinis, sliced
- 1 can (14 oz) diced tomatoes
- 1 cup chicken broth
- 1 teaspoon dried basil
- Salt and pepper to taste
- Fresh basil leaves for garnish
Instructions

Season the chicken breasts with salt and pepper.

In a large skillet, heat the olive oil over medium heat. Brown the chicken on both sides, then remove from the skillet and set aside.

In the same skillet, add the diced onion and minced garlic. Sauté until fragrant and the onion is translucent.

Add the sliced bell peppers and zucchinis to the skillet. Cook until they start to soften.

Stir in the diced tomatoes, chicken broth, and dried basil. Bring to a simmer.

Return the chicken breasts to the skillet. Cover and let it simmer for about 30 minutes, or until the chicken is cooked through.
