How To Make Spiced Chicken, Spinach & Sweet Potato Stew

Ingredients
- 4 boneless, skinless chicken breasts
- 2 tbsp olive oil
- 1 onion, diced
- 3 cloves of garlic, minced
- 1 tsp ground cumin
- 1 tsp ground coriander
- 1/2 tsp paprika
- 1/2 tsp cayenne pepper (adjust to taste)
- 2 sweet potatoes, peeled and cubed
- 4 cups chicken broth
- 2 cups fresh spinach leaves
- Salt and pepper, to taste
- Fresh cilantro, for garnish
Instructions

Season the chicken breasts with salt and pepper. In a large pot or Dutch oven, heat the olive oil over medium-high heat. Add the chicken and cook until browned on both sides. Remove the chicken from the pot and set aside.

In the same pot, add the diced onion and minced garlic. Sauté until the onion is softened and translucent.

Add the ground cumin, ground coriander, paprika, and cayenne pepper. Stir well to coat the onions and garlic with the spices.

Return the cooked chicken breasts to the pot, along with the sweet potato chunks. Pour in the chicken broth and bring to a boil. Reduce heat to low and simmer for about 30 minutes, or until the sweet potatoes are tender.

Remove the chicken breasts from the pot and shred them using two forks. Return the shredded chicken to the pot.

Stir in the fresh spinach leaves and cook for an additional 2-3 minutes, until wilted.

Season with salt and pepper, to taste. Serve the stew hot, garnished with fresh cilantro.
