Ingredients
- 1 cup dried lentils
- 1 onion, diced
- 3 cloves of garlic, minced
- 2 carrots, sliced
- 2 celery stalks, diced
- 1 lb smoked ham, cubed
- 1 tsp smoked paprika
- 1/2 tsp cumin
- 4 cups chicken broth
- Salt and pepper to taste
- Fresh parsley, chopped (for garnish)
Instructions

Rinse the lentils and set aside.

In a large pot, heat some oil over medium heat. Add the onion, garlic, carrots, and celery. Cook until softened, about 5 minutes.

Add the ham, smoked paprika, and cumin to the pot. Cook for an additional 2 minutes, stirring occasionally.

Add the lentils and chicken broth to the pot. Bring to a boil and then reduce heat to low. Simmer for 1 hour, or until the lentils are tender.

Season with salt and pepper to taste. Serve hot, garnished with fresh parsley.
