Ingredients
- 1 lb mushrooms, sliced
- 1 onion, chopped
- 3 cloves of garlic, minced
- 2 tbsp olive oil
- 2 tbsp tomato paste
- 1 cup diced tomatoes
- 1 cup vegetable broth
- 1 tsp dried oregano
- 1 tsp dried thyme
- 1 bay leaf
- Salt and pepper to taste
- Chopped fresh parsley for garnish
Instructions

Heat olive oil in a large pot over medium heat. Add onions and garlic, sauté until onions are translucent.

Add mushrooms to the pot and cook for about 5 minutes, until they start to release their moisture.

Stir in tomato paste and cook for another minute.

Add diced tomatoes, vegetable broth, oregano, thyme, bay leaf, salt, and pepper. Bring to a boil, then reduce heat and simmer for 30 minutes, covered.

Remove bay leaf and garnish with fresh parsley before serving.
