Ingredients
- 1.5 pounds beef stew meat, cut into bite-sized pieces
- 2 tablespoons all-purpose flour
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 2 tablespoons vegetable oil
- 1 onion, diced
- 3 cloves garlic, minced
- 2 carrots, sliced
- 2 celery stalks, sliced
- 2 potatoes, diced
- 4 cups beef broth
- 1 cup red wine (optional)
- 2 bay leaves
- 1 teaspoon dried thyme
- 1 cup frozen peas
Instructions

In a large bowl, combine the flour, salt, and black pepper. Toss the beef in the flour mixture until coated.

Heat the vegetable oil in a large pot or Dutch oven over medium-high heat. Brown the beef on all sides, then remove and set aside.

In the same pot, add the diced onion and minced garlic. Sauté until softened and fragrant.

Add the carrots, celery, and potatoes to the pot. Cook for 5 minutes, stirring occasionally.

Return the beef to the pot, along with any accumulated juices. Pour in the beef broth and red wine (if using). Add the bay leaves and dried thyme.

Bring the stew to a boil, then reduce heat to low. Cover and simmer for 1.5 to 2 hours, or until the beef is tender.

Stir in the frozen peas and cook for an additional 5 minutes, until heated through.
