Ingredients
- 2 cans (15 oz) giant butter beans, drained and rinsed
- 1 onion, diced
- 3 cloves of garlic, minced
- 2 carrots, peeled and diced
- 2 celery stalks, diced
- 1 can (14 oz) diced tomatoes
- 2 cups vegetable broth
- 1 tsp dried thyme
- 1 tsp dried rosemary
- 1 tsp smoked paprika
- Salt and pepper, to taste
- Fresh parsley, for garnish
Instructions

In a large pot, heat 1 tbsp of olive oil over medium heat. Add the diced onion and sauté until softened, about 5 minutes.

Add the minced garlic, diced carrots, and celery to the pot. Cook for an additional 5 minutes, until the vegetables start to soften.

Stir in the diced tomatoes, drained giant butter beans, vegetable broth, thyme, rosemary, and smoked paprika. Season with salt and pepper to taste.

Bring the stew to a boil, then reduce the heat to low. Cover and simmer for 1 hour, stirring occasionally.

After 1 hour, remove the lid and continue to cook for an additional 30 minutes, until the stew thickens and the flavors meld together.

Serve the giant butter bean stew hot, garnished with fresh parsley.
