Ingredients
- 500g boneless, skinless chicken breasts, cut into cubes
- 1 onion, diced
- 2 garlic cloves, minced
- 2 carrots, sliced
- 2 bell peppers, diced
- 1 zucchini, sliced
- 1 can (400g) diced tomatoes
- 2 cups chicken broth
- 1 tsp dried thyme
- 1 tsp dried oregano
- Salt and pepper to taste
- 1 cup wholemeal couscous
- Fresh parsley for garnish
Instructions

In a large pot, heat some oil over medium heat. Add the diced onion and minced garlic, sauté until fragrant.

Add the chicken cubes to the pot and cook until they are browned on all sides.

Stir in the carrots, bell peppers, and zucchini. Cook for a few minutes until slightly softened.

Pour in the diced tomatoes and chicken broth. Season with dried thyme, dried oregano, salt, and pepper. Stir well.

Bring the stew to a boil, then reduce the heat to low, cover, and simmer for about 30 minutes, or until the chicken is cooked through and the vegetables are tender.

While the stew is simmering, prepare the wholemeal couscous according to the package instructions.

Serve the chicken and vegetable stew over a bed of wholemeal couscous. Garnish with fresh parsley.
