How To Make Super Steak with Cheat’s Béarnaise

Ingredients
- 4 steaks (ribeye or filet mignon), about 1 inch thick
- Salt and pepper to taste
- 2 tablespoons olive oil
- 1 cup mayonnaise
- 3 tablespoons Dijon mustard
- 2 tablespoons white vinegar
- 2 egg yolks
- 2 tablespoons chopped fresh tarragon
- 2 tablespoons chopped fresh chives
Instructions

Preheat grill or skillet over high heat. Season steaks generously with salt and pepper.

Drizzle steaks with olive oil and rub to coat. Place steaks on the grill or skillet and cook for 4-5 minutes per side for medium-rare, or until desired doneness is reached. Remove from heat and let rest for 5 minutes.

In a small bowl, combine mayonnaise, Dijon mustard, white vinegar, and egg yolks. Whisk until well blended.

Place the bowl over a pot of simmering water, making sure the bottom of the bowl does not touch the water. Whisk constantly until the sauce thickens, about 5 minutes.

Remove from heat and stir in chopped tarragon and chives. Season with salt and pepper to taste.

Serve the steaks with a generous dollop of cheat’s béarnaise sauce on top.
