Ingredients

  • 1 tbsp olive oil
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 2 carrots, diced
  • 2 celery stalks, diced
  • 1 can (14 oz) diced tomatoes
  • 4 cups vegetable broth
  • 1/2 cup long-grain white rice
  • 1 tsp dried basil
  • 1/2 tsp dried oregano
  • Salt and pepper to taste
  • Fresh basil leaves, for garnish

Instructions

  1. Heat olive oil in a large pot over medium heat. Add onion and garlic and cook until softened.

  2. Add carrots and celery to the pot and cook for another 5 minutes.

  3. Stir in diced tomatoes and vegetable broth. Bring to a boil.

  4. Reduce heat to low and add rice, dried basil, and dried oregano. Simmer for 20-25 minutes or until rice is cooked.

  5. Season with salt and pepper.

  6. Serve hot, garnished with fresh basil leaves.
