- 1 tbsp vegetable oil
- 1 onion, chopped
- 2 garlic cloves, minced
- 1 tbsp Thai red curry paste
- 1 lb boneless, skinless chicken breasts, cut into cubes
- 2 medium sweet potatoes, peeled and diced
- 4 cups chicken broth
- 1 cup coconut milk
- 1 tbsp fish sauce
- 1 tbsp soy sauce
- Juice of 1 lime
- Salt and pepper, to taste
- Cilantro, for garnish
- Lime wedges, for serving
Instructions

Heat the vegetable oil in a large pot over medium heat. Add the chopped onion and minced garlic, and cook until softened.

Stir in the Thai red curry paste and cook for an additional minute.

Add the chicken cubes to the pot and cook until browned on all sides.

Add the diced sweet potatoes, chicken broth, coconut milk, fish sauce, and soy sauce to the pot. Bring to a boil, then reduce heat and simmer for 20 minutes, or until the sweet potatoes are tender.

Using an immersion blender or regular blender, blend the soup until smooth and creamy.

Stir in the lime juice and season with salt and pepper to taste.
