  • 4 cups of fresh stinging nettles, washed
  • 1 onion, chopped
  • 2 cloves of garlic, minced
  • 4 cups of vegetable broth
  • 1 potato, peeled and diced
  • 1 cup of heavy cream
  • Salt and pepper to taste
  • Optional toppings: croutons, grated Parmesan cheese

Instructions

  1. In a large pot, sauté the onion and garlic until translucent.

  2. Add the stinging nettles and cook until wilted.

  3. Pour in the vegetable broth and add the diced potato. Simmer for 20 minutes or until the potato is tender.

  4. Using an immersion blender, puree the soup until smooth.

  5. Stir in the heavy cream and season with salt and pepper. Cook for an additional 5 minutes.

  6. Serve the soup hot, topped with croutons and grated Parmesan cheese if desired.
