Ingredients
- 1.5 lbs of turkey breast, boneless and skinless
- 8 cups of low-sodium chicken broth
- 2 cinnamon sticks
- 4 star anise
- 3 cloves
- 1 onion, sliced
- 3 garlic cloves, minced
- 1-inch piece of ginger, sliced
- 2 tablespoons of fish sauce
- 1 tablespoon of sugar
- 8 oz of rice noodles
- Garnish: fresh herbs (cilantro, Thai basil), bean sprouts, lime wedges, jalapeno slices
Instructions

Place the turkey breast, chicken broth, cinnamon sticks, star anise, cloves, onion, garlic, and ginger in the slow cooker. Cook on low for 8 hours.

Remove the turkey breast from the slow cooker and shred it using two forks. Set aside.

Strain the broth, discarding the solids. Return the broth to the slow cooker.

Stir in the fish sauce and sugar. Taste and adjust seasonings if needed.

Cook the rice noodles according to package instructions, then drain.

To serve, divide the rice noodles among 4 bowls. Top with the shredded turkey and ladle the hot broth over the noodles and turkey.
