How To Make Slow Cooker Chicken Tortilla Soup Recipe
A warm and comforting soup loaded with chicken, veggies, and topped with crispy tortilla chips.
Serves:
Ingredients
- 1 lb boneless skinless chicken breasts
- 1 onion, chopped
- 1 red bell pepper, chopped
- 1 can of black beans, rinsed and drained
- 1 can of corn, drained
- 1 can of fire-roasted diced tomatoes
- 1 jalapeno pepper, seeded and minced
- 3 garlic cloves, minced
- 1 tsp chili powder
- 1 tsp paprika
- 1 tsp cumin
- 1/2 tsp salt
- 4 cups of chicken broth
- Juice of 1 lime
- Tortilla chips, sour cream, shredded cheese, and fresh cilantro for topping
Instructions

Add chicken, onion, bell pepper, black beans, corn, diced tomatoes, jalapeno, garlic, chili powder, paprika, cumin, salt, and chicken broth to a slow cooker.

Cook on high for 3-4 hours or low for 6-8 hours until chicken is tender and fully cooked.

Remove chicken from the slow cooker and shred with two forks.

Return chicken to the slow cooker, add lime juice, and cook for an additional 15 minutes.

Serve soup hot topped with tortilla chips, sour cream, shredded cheese, and fresh cilantro.
