Ingredients
- 1 tablespoon olive oil
- 1 pound Italian sausage, casings removed
- 1 onion, diced
- 3 cloves garlic, minced
- 2 carrots, diced
- 2 celery stalks, diced
- 1 can (14.5 ounces) diced tomatoes
- 4 cups chicken broth
- 1 teaspoon dried basil
- 1 teaspoon dried oregano
- 1 cup small pasta (such as ditalini)
- 2 cups chopped spinach
- Salt and pepper, to taste
- Grated Parmesan cheese, for serving
Instructions

Heat the olive oil in a large pot over medium heat. Add the sausage and cook until browned, breaking it up into crumbles. Remove sausage from the pot and set aside.

In the same pot, add the onion, garlic, carrots, and celery. Cook until vegetables are tender, about 5 minutes.

Add the diced tomatoes, chicken broth, dried basil, and dried oregano to the pot. Bring to a boil, then reduce heat and simmer for 15 minutes.

Stir in the pasta and simmer for an additional 10 minutes, or until pasta is cooked.

Add the cooked sausage and chopped spinach to the pot. Cook for an additional 5 minutes, until heated through and spinach is wilted. Season with salt and pepper to taste.
