- 2 chicken breasts, sliced
- 200g rice noodles
- 2 tbsp satay sauce
- 1 tbsp soy sauce
- 1 tbsp sesame oil
- 1 tbsp brown sugar
- 2 cloves garlic, minced
- 1 thumb-sized ginger, grated
- 1 small onion, diced
- 1 red bell pepper, sliced
- 4 cups chicken broth
- 1 cup coconut milk
- 1 lime, juiced
- Fresh cilantro, chopped
- Crushed peanuts, for garnish
- Sriracha, for serving
Instructions

In a bowl, marinate the chicken slices with satay sauce, soy sauce, sesame oil, and brown sugar. Let it sit for 10 minutes.

In a large pot, heat some oil over medium heat. Add garlic, ginger, and onion. Sauté until fragrant.

Add the marinated chicken and cook until no longer pink.

Add bell pepper, chicken broth, coconut milk, and lime juice. Bring to a simmer and let it cook for 10 minutes.

Meanwhile, cook the rice noodles according to the package instructions. Drain and set aside.
