- 2 stalks celery, diced
- 1 cup cooked black-eyed peas
- 4 cups vegetable broth
- 1 cup diced tomatoes
- 1 tsp smoked paprika
- 1 tsp cumin
- 1/2 tsp black pepper
- 1/2 tsp salt
- 1 cup cooked rice
- Optional toppings: chopped green onions, hot sauce
