- 4 bone-in pork chops
- 1 tbsp vegetable oil
- 1 onion, diced
- 2 carrots, peeled and sliced
- 2 celery stalks, sliced
- 4 cups chicken broth
- 1 tsp dried thyme
- Salt and pepper to taste

In a large pot, heat the vegetable oil over medium heat. Season the pork chops with salt and pepper, then add them to the pot. Cook until browned on both sides, about 5 minutes per side. Remove from the pot and set aside.

In the same pot, add the diced onion, sliced carrots, and celery. Cook until the vegetables are tender, about 5 minutes.

Return the pork chops to the pot and add the chicken broth and dried thyme. Bring to a boil, then reduce heat to low and simmer for 45 minutes, until the pork is tender.

Remove the pork chops from the pot and shred the meat. Return the shredded pork to the pot and stir to combine. Cook for an additional 10 minutes.
