Ingredients
- 2 pounds of oxtail
- 1 onion, chopped
- 3 cloves of garlic, minced
- 2 carrots, sliced
- 2 celery stalks, chopped
- 1 bay leaf
- 1 teaspoon of thyme
- 6 cups of beef broth
- Salt and pepper to taste
- Fresh parsley, for garnish
Instructions

In a large pot, sear the oxtail over medium-high heat until browned on all sides. Remove and set aside.

In the same pot, sauté the onions and garlic until translucent.

Add the carrots, celery, bay leaf, and thyme. Cook for 5 minutes.

Return the oxtail to the pot and pour in the beef broth. Bring to a boil.

Reduce heat to low, cover the pot, and simmer for 3 hours or until the oxtail is tender and meat is falling off the bone.

Remove the oxtail from the pot and shred the meat, discarding any bones and excess fat.

Return the shredded meat to the pot. Season with salt and pepper to taste.

Serve hot, garnished with fresh parsley.
