- 1 lb chicken thighs, boneless and skinless, sliced into thin strips
- 4 cups chicken broth
- 2 cloves garlic, minced
- 1 inch ginger, grated
- 2 tbsp soy sauce
- 2 tbsp oyster sauce
- 1 tsp sesame oil
- 4 oz rice noodles
- 1 cup sliced mushrooms
- 1 cup baby spinach
- Salt and pepper to taste
- Green onions, chopped (for garnish)
Instructions

In a large pot, heat some oil over medium heat. Add garlic and ginger, sauté for a minute.
